Healthy breakfast dessert for today. I modified the usual recipe to make this nutrient dense and to contain higher protein.
I also used the stove instead of the oven so you can try this even if you don’t have oven at home.
Here is my recipe:
Stovetop Fruit and Nut Bread Pudding
Ingredients:
Bread (I used 2/3 of a small loaf of wheat bread)
1 c milk
2 brown eggs
1/8c melted butter
1/3c brown sugar
2T ground flax
1/2c chopped walnuts
1/8c raisins
Instructions:
Combine milk, eggs, melted butter, sugar, and ground flax in a bowl. Tear up or chop the bread into smaller pieces and transfer to a small nonstick pot. Pour the milk mixture onto the bread and mix until the bread is completely soaked. Add raisin and walnuts and mix well. (May add small amount of milk if mixture is too thick and did not soak up all the bread.)
Cook over low heat for 15-20minutes or until middle of the pudding is firm.
Serve with some condensed milk or honey. Pair with some scrambled eggs.
