If you are one of those who received food relief packages from your LGU then I am sure you still have extra cans of sardines. Sharing with you today how you can use this as main ingredient for a dish that your whole family will surely enjoy.
Red Pesto Veggie and Sardine Pasta
Ingredients:
350g penne, cooked per package instructions
1 medium broccoli florets, chopped
1 medium cauliflower, chopped
4 cans sardines
1 pouch red pesto sauce, remive half of oil
3 cloves garlic
1 canned mushroom
1T sugar
Instructions:
Cook penne pasta per package instructions. Steam vegetables separately or add to pasta on the last few minutes of cooking.
Drain sauce of sardines on a bowl then set aside.
Open pouch of red pesto sauce, remove 1/2 of oil from package.
Saute garlic on a nonstick pan using the remaining oil of the red pesto sauce. [Do not pour the pesto mix yet.]
Add mushrooms and sardines. Using a wooden spoon, gently crush the sardines and mix with the mushrooms. Add the red pesto and 1/2 cup of the sardines tomato sauce. Add 1 tablespoon sugar and mix well. Allow to simmer over low heat for 5 minutes. Turn off heat.
Add the pasta and vegetables to the sauce and mix well.
