My healthy take on Taco Tuesday

A supposed Taco Tuesday night became Nacho Libre.


Here’s my recipe

Ingredients:

  • 500g ground round (can be changed to ground chicken)

  • 3 cloves minced garlic

  • 1 medium chopped onion

  • 2 cups cooked/canned beans

  • 2-1/2 cups tomato sauce

  • 1-1/2 tablespoons Taco seasoning

  • 1 tablespoon sugar

  • Taco shells or nacho chips

  • Chopped romaine lettuce



Instructions:

  1. Saute ground meat together with garlic and onion. Cook until no longer pink then discard meat juice.

  2. Add cooked beans, tomato sauce, and seasonings. Allow to simmer for 5min then turn off heat.

  3. Serve with chopped lettuce, tacos or nacho chips.

  4. Add some grated cheese if desired.
